CNN Secret Supper: flavor-tripping in Chicago

What do you get when you mix a cup of miracle berries, a glass of farm-to-table homemade apple cider and Roland’s Rules for Thanksgiving? A recipe for Eatocracy’s fifth CNN.com Secret Supper. CNN Contributors Roland Martin and LZ Granderson, Second City troupe member Tim Sniffen, Tio Hardiman from CeaseFire, and four local chefs all gathered around the table to talk about the food scene in Chicago and how it reflects the population.

The evening belted out a ‘quartet of sausage’, made by Chef Doug Sohn of Hot Doug’s. He began with a mini Chicago hot dog with everything, followed by chicken chorizo with guacamole, a lamb sausage gyro and finished off with a Foie gras duck sausage.

Then, Chef Matthias Merges presented his dish, which was cod steamed in dashi, robata grilled enoki mushrooms wrapped in nori, alongside a crispy pig’s tail.

Chef Mindy Segal sweetened up the evening with her Apple Lattice Pie which included apples, bacon fat, quail, liver. To drink, a homemade, locally-brewed cider.

iNG Chef Homaro Cantu brought the evening home with his flavor-tripping pill, which confused the guests’ taste buds as they ate lemons that tasted like lemonade and limes that tasted like oranges.

After everyone finished eating, CNN contributor Roland Martin read “Roland’s Rules for Thanksgiving”, which he writes for every holiday. A couple excerpts from the rulebook include:

  1. Find your own transportation… you knew Thanksgiving was coming all year!
  2. If you have children, no, we will not make him/her any chicken fingers.
